Moo Shu Beef


 Turn the popular Chinese dish into a 30-minute meal by using ground beef and packaged coleslaw mix in the filling. Flour tortillas make a handy substitute for the traditional pancakes.

Ingredients

    2 tablespoons vegetable oil
    1 pound ground round steak
    3 cloves garlic, finely chopped
    1 bag (16 ounces) classic coleslaw mix
    4 large carrots, peeled and shredded
    1/2 cup ketchup
    1/4 cup reduced-sodium soy sauce
    1/4 cup water
    1/2 teaspoon red-pepper flakes
    6 scallions, trimmed and thinly sliced
    16 fajita-size flour tortillas (each about 7 inches in diameter)
 

Directions

1. In large nonstick skillet, heat oil over medium-high heat. Crumble in ground round steak; saute until no longer pink, about 5 minutes.
2. Add garlic, coleslaw mix and carrot; cook, stirring occasionally, until vegetables are softened, 8 minutes.
3. Stir in ketchup, soy sauce, water and red-pepper flakes; simmer 2 minutes. Remove skillet from heat. Stir in scallions.
4. Gently heat the flour tortillas following package directions. To serve, divide filling among tortillas and roll up. Makes 8 servings.
