The Eat-Clean Diet: Diet Review



It sounds so simple and so trendy. “The Eat-Clean Diet is a lifestyle way of eating that allows you to eat more, weigh less, and become the healthiest you can be,” says Tosca Reno, author of The Eat-Clean Diet series.

Not only will you lose about 3 pounds a week, you will see dramatic changes in the way you look and feel, Reno says.

Reno says that eating clean encourages a lifestyle approach of exercise and a diet plan of unprocessed, whole foods like fruits, vegetables, whole grains, lean meats, and void of artificial ingredients, preservatives, "chemically charged foods," sugars, saturated fat, and trans fat.

That means tomatoes are in, ketchup is out. “We live in a chemical soup experiment. Processed foods have undermined our health, especially sugars, which are deadly anti-foods that have no place in our body,” Reno says.

Plans range from 1,200-1,800 calories, eaten in 5-6 small meals throughout the day -- designed to "fire up the metabolism." Practicing portion control helps dieters avoid the dreaded calorie counting.

The Eat-Clean Diet is a beautiful book with lots of pictures of delicious-sounding recipes with nutrition information, glossy pictures, sample meal plans, grocery lists, and more to help dieters get excited about eating a healthy diet and engaging in more physical activity.

Written in an easy-to-understand, motivating, and reader-friendly style, Reno places the emphasis for weight loss and good health on 80% food, 10% training, and 10% genes.

Eating a diet rich in plant foods, exercising, and controlling portions is sage advice and the cornerstone of all credible diet plans. But Reno veers off the path with some of her advice that is not based on scientific evidence -- like totally eliminating saturated fat and some of her recommendations for supplements.


The Eat-Clean Diet: What You Can Eat

Foods allowed include a variety of whole grains, fruits, vegetables, lean proteins, nonfat dairy, and healthy fats -- preferably organic and eaten in proper portions every few hours.

The Eat-Clean Diet recommends avoiding all saturated fat, trans fats, overprocessed, refined foods -- especially white flour, sugar, sugar-loaded colas, juices, and alcohol.

The plan's guiding principles:

Each meal should be between 200-300 calories.
Eat a complex carbohydrate with protein (20-21 grams) at every meal.
Drink at least 8 cups of water daily.
Never miss a meal, especially breakfast.
Consume adequate healthy fats each day.
“I recommend shopping at farmers markets or when at the grocery store, stick to the perimeter and choose foods with one to three pronounceable ingredients only, staying away from any food that comes in a box or bag that man has had a hand in creating or contains ingredients you can’t pronounce,” Reno says.

Strict rules govern the foods allowed except a once-a-week cheat meal or treat, such as a piece of dark chocolate or glass of red wine. Reno encourages dieters to prepare their own meals at home and, when traveling, take along portable nutritious foods.

The Eat-Clean Diet: How It Works

A calorie-controlled diet and regular exercise are the mainstays of the plan. Much like most successful weight loss plans, dieters are encouraged to eat wholesome foods high in fiber, along with lean protein to reduce cravings and help satisfy hunger on fewer calories.

“Starting the day with a nutritious breakfast and eating high-fiber carbs, lean protein with a little healthy fat every few hours, along with strength training can boost your metabolism and be a natural detox,” Reno says.

Exercise is emphasized as an essential part of the program, including regular physical activity and weight training at least three days a week for a minimum of 30 minutes.

The Eat-Clean Diet: Expert's View

Follow the basic rules, use the recipes and meal plans, but skip the nutrition information and supplement advice, which is a mixed bag of fact and fiction, says American Dietetic Association spokeswoman Roberta Anding, MS, RD.

“We all know the importance of regular exercise, not skipping meals, drinking plenty of water, and a diet based on plant foods and lean, low-fat protein, but beyond that the advice is unrealistic and not necessarily healthy,” says Anding, a Baylor College of Medicine nutritionist.

Studies show small amounts of alcohol can be cardio-protective and small amounts of saturated fat are unavoidable and not harmful to your health.

Diet plans that are very restrictive and have too many rules can be difficult to follow long term, Anding says.

The Eat-Clean Diet: Food for Thought

The Eat-Clean Diet is a pure approach of healthy eating and exercise taken to the extreme. It is so structured, restrictive, and unrealistic that it may be difficult to follow long term.

Take the questionable advice peppered throughout the book with a grain of salt, as there are lots of inaccuracies that are more opinion than scientific evidence.

The best part of The Eat-Clean Diet is the motivation, nutrient-rich recipes, and meal plans that can help dieters shift toward including more healthy wholesome foods into their menus.

The Blood Type Diet



Could eating a diet based on your blood type -- O, A, B, or AB -- help you trim down and get healthier? That's the idea behind the Blood Type Diet, created by naturopath Peter J. D'Adamo.

D'Adamo claims that the foods you eat react chemically with your blood type. If you follow a diet designed for your blood type, your body will digest food more efficiently. You'll lose weight, have more energy, and help prevent disease.

What You Can Eat

That depends on your blood type. Here's what D'Adamo recommends for each type:

Type O blood: A high-protein diet heavy on lean meat, poultry, fish, and vegetables, and light on grains, beans, and dairy. D'Adamo also recommends various supplements to help with tummy troubles and other issues he says people with type O tend to have.


Type A blood: A meat-free diet based on fruits and vegetables, beans and legumes, and whole grains -- ideally, organic and fresh, because D'Adamo says people with type A blood have a sensitive immune system.

Type B blood: Avoid corn, wheat, buckwheat, lentils, tomatoes, peanuts, and sesame seeds. Chicken is also problematic, D'Adamo says. He encourages eating green vegetables, eggs, certain meats, and low-fat dairy.

Type AB blood: Foods to focus on include tofu, seafood, dairy, and green vegetables. He says people with type AB blood tend to have low stomach acid. Avoid caffeine, alcohol, and smoked or cured meats.

Level of Effort: High

If you don't already know your blood type, you'll need to find that out. The results will determine exactly what you need to do.

Limitations: Depending on your blood type, you may need to severely restrict the foods you eat.

Cooking and shopping: Your blood type will determine your shopping list and your choices when eating out.

Packaged foods or meals? None required.

In-person meetings? No.

Exercise: The Blood Type Diet recommends exercises based on your blood type. For instance, it suggests yoga or tai chi for type A’s, and vigorous aerobic exercises like jogging or biking for up to an hour a day for type O’s.

Does It Allow for Dietary Restrictions or Preferences?

Because the diet dictates that you eat very specific types of food based on your blood type, it doesn't allow much for personal tastes.

For example, if you're a big fan of meat and potatoes, you won't be very happy on the type A diet, which is mostly vegetarian.

There are even recommendations about the types of spices and condiments you can use.

If you're looking for a diet that's gluten-free, you should know that this diet doesn't ban gluten. You may be able to make choices that are gluten-free, if you read food labels carefully.

What Else You Should Know

Cost: D'Adamo recommends a lot of specialty and organic foods (such as soy milk and carob chip cookies), which can be pricey. Vitamin and herbal supplements are also part of the diet.

Support: You do this diet on your own.

Does It Work?

Only one study has looked at this kind of diet. It found that people with certain blood types got more of a cholesterol-lowering benefit from eating a low-fat diet. But it didn't prove that the Blood Type Diet was responsible for this effect or that it works for weight loss.

It's likely that you would lose weight, though, because the diet can be very restrictive.

Is It Good for Certain Conditions?

The Blood Type Diet makes recommendations based solely on your blood type. So, if you have a chronic condition (say, diabetes), you may be told to eat high protein, while another person with diabetes may have to avoid dairy or chicken. This may conflict with your diabetes treatment plan.

The American Diabetes Association recommends a more practical approach to your day-to-day eating. It also cautions against focusing on specific foods. In most cases it doesn't recommend cutting out any major food groups.

The Blood Type Diet also fails to address other conditions such as heart disease, high blood pressure, or cholesterol. Any needed weight loss is sure to have a positive impact on these conditions. But no matter your blood type, you should follow the same guidelines issued by The American Heart Association (AHA) for a low-fat and low-salt diet.

Also, everyone should aim for 150 minutes of aerobic exercise per week and at least 2 days of strength training per week.

The Final Word

On The Blood Type Diet, you’ll avoid processed food and simple carbs. That may be enough to help you lose some weight. But any weight loss on this diet has not been linked to your blood type.

There’s also no research proving that this diet can aid in digestion or give you more energy.

Although you'll buy and prepare your own foods on this plan, your choices are limited depending on your blood type. So be prepared to spend some time in the kitchen.

The diet may quickly become expensive, too, since the author recommends you buy organics as well as his own line of supplements.

If the Blood Type Diet intrigues you, consider this: The science is stacked behind traditional recommendations for healthy eating for weight loss -- not restrictions based on the type of your blood.

Peppery Mexican Chicken Salad


 Bottled hot pepper sauce provides the heat in the spicy dressing. For a taco-style salad, serve the chicken, avocado, and rice combo in purchased tortilla shells.

Ingredients

    1/2 pound boneless, skinned chicken breasts
    1 sweet red pepper, diced (about 3/4 cup)
    1 sweet yellow pepper, diced (about 3/4 cup)
    4 green onions, sliced (about 1/3 cup)
    1 cup cooked white rice

Dressing

    1/4 cup apple-cider vinegar
    1 teaspoon chili powder
    1/2 teaspoon salt
    1/4 teaspoon ground cumin
    1/8 teaspoon black pepper
    2 dashes hot-pepper sauce
    Juice of 1 lime (about 3 tablespoons)
    1/4 cup vegetable oil
    1 avocado, peeled, pitted and cut into chunks
 

Directions

1. Bring 3 cups water to boiling in shallow skillet or saucepan. Reduce heat to medium; add chicken breasts. Poach chicken at gentle simmer for 10 minutes or until no longer pink in center. Remove skillet from heat. Let the chicken cool slightly in liquid before removing to a cutting board.
2. Once chicken has cooled completely, shred with fork. Transfer to serving bowl.
3. Add peppers, green onions and white rice.

Dressing:

1. Whisk together vinegar, chili powder, salt, cumin, black pepper, pepper sauce and lime juice in measuring cup or bowl. Whisk in oil in a thin stream until well blended.
2. Add dressing to salad in serving bowl; toss to mix. Add avocado; stir gently to combine, being careful not to mash avocado. Use to fill flour or flavored tortillas, or taco shells.

Crispy Buttermilk Fried Chicken


 Ingredients

    3 cups all-purpose flour
    3 teaspoons salt
    2 teaspoons black pepper
    1 1/2 teaspoons sugar
    1 1/2 teaspoons paprika
    1 1/2 cups buttermilk
    2 eggs
    1 1/2 teaspoons baking powder
    3/4 teaspoon baking soda
    1 broiler-fryer chicken (about 3-1/2 pounds), cut into 8 pieces
    4 cups peanut oil


Directions

1. In a 13 x 9 x 2-inch baking pan, whisk together flour, salt, pepper, sugar and paprika. In a medium-size bowl, whisk together buttermilk, eggs, baking powder and baking soda until smooth.
2. Dip each piece of chicken into buttermilk mixture, shaking off excess. Roll in flour mixture and then dip into buttermilk and flour mixture a second time. Place on a baking sheet fitted with a wire rack. Refrigerate while heating oil.
3. Heat oven to 175 degrees F. Place oil in a large lidded heavy-bottom Dutch oven. Heat oil to 360 degrees F over medium-high heat. Place half of the chicken pieces, skin-side down, in the oil. Cover and reduce heat to medium. Fry chicken for 7 to 8 minutes or until golden brown. Check after 4 minutes to be sure chicken is browning evenly. Rearrange if necessary. Flip chicken over and fry an additional 7 to 8 minutes or until golden and internal temperature registers 170 degrees F on an instant-read thermometer. Transfer chicken to a baking sheet fitted with wire rack and place in oven to keep warm.
4. Return oil to 360 degrees F and fry remaining chicken pieces. Serve warm.

Grilled Chicken & Black Bean Salsa


 Ingredients

    1 box (6.8 ounces) Spanish rice mix (such as Rice a Roni)
    4 boneless, skinless chicken breast halves (about 1 1/4 pounds), split if large and pounded to an even thickness
    1 (15 ounces) black beans, drained and rinsed
    2 scallions, trimmed and chopped
    1 jalapeno chile, seeded and diced
    1 can (8 ounces) pineapple chunks in juice
    1 can (14.5 ounces) no-salt-added diced tomatoes
    1 tablespoon vinegar
    2 teaspoons canola oil
    2 tablespoons unsalted butter


Directions

1. Remove seasoning packet from rice mix. Measure out 1 teaspoon and sprinkle over both sides of chicken in a glass dish.
2. In a bowl, combine beans, scallions and jalapeno. Dice pineapple chunks (reserving juice) and add to bowl. Pour 3 tablespoons reserved juice over chicken. Stir 1/3 cup of the diced tomatoes and 1/4 teaspoon of the rice seasoning mix into the bean mixture. Add vinegar and oil; stir and set aside.
3. Prepare Rice. Heat butter in a large, lidded skillet. Add rice mixture. Saute over medium heat, about 3 minutes. Stir in 21/4 cups water, remaining seasoning and remaining diced tomatoes. Bring to a boil. Cover and reduce heat to low. Simmer 20 minutes.
4. Heat grill or grill pan. Once ready, grill chicken 3 to 4 minutes per side, turning once, or until cooked through. Serve chicken with salsa and rice.

Tortellini and Garden Vegetable Bake


 If you're looking for casserole recipe for a potluck, count on this chicken casserole to do you proud. Hearty tortellini, colorful fresh vegetables, and rich cream cheese will make this chicken recipe a true standout on the table! 

Ingredients

    10 ounces dried cheese-filled tortellini (2-1/2 cups) or two 9-ounce packages refrigerated tortellini
    1 medium carrot, thinly sliced
    1 1/2 cups sugar snap peas, halved crosswise
    1 tablespoon margarine or butter
    1 pound skinless, boneless chicken breasts, cut into bite-size pieces
    1 cup sliced fresh mushrooms
    1/3 cup chicken broth
    2 tablespoons snipped fresh oregano or 1-1/2 teaspoons dried oregano, crushed
    2 teaspoons all-purpose flour
    3/4 teaspoon garlic salt
    1/2 teaspoon pepper
    1 cup milk
    1 8 ounce package cream cheese or light cream cheese (Neufchatel), cubed and softened
    1 tablespoon lemon juice
    1 cup quartered cherry tomatoes
    1 small red or green sweet pepper, coarsely chopped
    2 tablespoons grated Parmesan cheese
 

Directions

1. Cook tortellini in boiling salted water according to package directions, adding the carrot during the last 5 minutes of cooking and the sugar snap peas during the last 1 minute of cooking; drain.
2. Meanwhile, heat margarine or butter in a 12-inch skillet. Add chicken and mushrooms, and cook about 5 minutes or until chicken is no longer pink. Remove from skillet.
3. Shake together chicken broth, oregano, flour, garlic salt, and pepper in a screw-top jar until smooth. Add to skillet along with milk. Cook and stir until thickened and bubbly; add cream cheese. Cook and stir until cream cheese is smooth. Remove from heat. Stir in lemon juice. Add pasta mixture, chicken mixture, tomatoes, and sweet pepper. Toss to coat. Turn into an ungreased 13x9x2-inch baking dish or shallow 3-quart casserole.
4. Bake, covered, in a 350 degrees F oven for 30 to 35 minutes or until heated through. Stir mixture and sprinkle with Parmesan cheese. Transport in an insulated carrier. Makes 12 main-dish servings.

Make Ahead Tip

    Prepare as directed but don't bake it. Instead, cover and chill up to 24 hours. Bake, covered, in a 350 degrees F oven about 55 minutes or until hot.

Spice Cake with Praline


 Everyday spice cake goes uptown when it's topped with whipped cream and adorned with homemade praline candies.

Ingredients

Spice Cake:

    3 cups all-purpose flour
    1 tablespoon cinnamon
    1 tablespoon ginger
    2 1/4 teaspoons baking powder
    1/2 teaspoon salt
    1/2 teaspoon ground cloves
    2/3 cup milk
    3/4 cup (1 1/2 sticks) unsalted butter, at room temperature
    2/3 cup granulated sugar
    2/3 cup packed light-brown sugar
    1/4 cup molasses
    2 teaspoons vanilla extract
    3 large eggs

Topping:

    1 cup heavy cream
    1 tablespoon granulated sugar
    1/2 cup chopped Praline

Praline:

    1/2 cup hazelnuts
    2/3 cup sugar
    3 tablespoons water
    pinch salt
 

Directions

1. Heat oven to 325 degrees F. Coat 9-inch springform pan with cooking spray. Line with waxed paper; coat paper.
2. Into large bowl, sift together flour, cinnamon, ginger, baking powder, salt and cloves.
3. In clean bowl, beat butter until smooth. Add both sugars, molasses and vanilla; beat 1 minute. Scrape down bowl. Beat in eggs, 1 at a time. On low speed, alternately beat in flour mixture and milk, ending with flour. Spoon into pan; smooth top.
4. Bake in 325 degree F oven until toothpick comes out clean, 80 minutes. Let cool in pan on rack 15 minutes. Remove side of pan. Invert cake; remove bottom, paper. Invert onto rack; cool.

Topping:

1. In bowl, beat cream and sugar until medium peaks form. Spread over cake. Top with praline. Makes 16 servings.

Praline:

1. Toast hazelnuts on baking sheet in 325 degrees oven until lightly colored, 7 minutes. Rub in towel to remove skins; coarsely chop. Line large baking sheet with nonstick aluminum foil. In small saucepan (not nonstick), combine sugar, water and salt. Heat over medium-high heat until bubbly; simmer until light golden, 5 minutes. Stir in hazelnuts until coated. Carefully spread onto baking sheet. Let cool completely, about 15 minutes. Break into small pieces; use 1/2 cup on Spice Cake, reserve extra for snacking. Makes 16 servings.

Carrot Cupcakes


 Just in case guests can't tell these jumbo cupcakes are made with a standard carrot cake batter, use tinted icing to draw carrots on top of the yummy cream cheese icing.

Ingredients

Cupcakes:

    2 3/4 cups all-purpose flour
    1 1/4 teaspoons baking soda
    1 teaspoon baking powder
    1 teaspoon cinnamon
    3/4 teaspoon salt
    1/4 teaspoon ground cloves
    1/4 teaspoon allspice
    1/8 teaspoon freshly grated nutmeg
    3/4 cup vegetable oil
    1 1/2 cups packed light brown sugar
    3 eggs
    1 1/2 carrots (shredded)
    1 cup chopped walnuts

Icing:

    1 8 ounce package cream cheese, softened
    1 1/2 cups confectioners' sugar, sifted
    1/4 cup heavy cream
    1 teaspoon vanilla extract
    Green, yellow and red food coloring
 

Directions

1. Heat oven to 350 degrees F.
2. Line 8 indentations of one or two jumbo muffin tins with paper or foil liners.
3. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, salt, cloves, allspice and freshly grated nutmeg. Set aside.
4. Pour oil into a large bowl. Crumble brown sugar into oil, breaking up any lumps with hands. Beat together with an electric mixer until combined. Add the eggs, one at a time, and beat until well blended. Stir in the flour mixture until no lumps remain. Fold in shredded carrot and walnuts until combined. Transfer batter to prepared muffin tins, a scant 2/3 cup per indentation.
5. Bake in 350 degrees F oven for 30 minutes, or until tops have crowned and toothpick inserted in centers comes out clean.
6. Place muffin tins on wire rack and cool cupcakes in tins about 5 minutes, then turn out and cool completely on a wire rack. Reline pan and repeat with remaining batter if necessary.

While cupcakes cool, prepare Icing:

1. In a medium bowl with an electric mixer on low speed, beat together the cream cheese, confectioners' sugar, heavy cream and vanilla extract. Refrigerate until time to ice.
2. When ready to ice cupcakes, set aside 1/2 cup icing. Spread remaining icing onto cupcakes, a scant 1/4 cup per cupcake.
3. Tint 1/4 cup of the reserved icing green. To tint remaining 1/4 cup icing orange, add a few drops each of yellow and red coloring until desired intensity is reached.
4. Transfer colored icings to 2 small plastic heavy-duty food storage bags. Snip off a small corner of the bags and use to pipe carrots on top of cupcakes, if desired. (It helps if you practice making the carrot design first on waxed paper.)

Ice-Cream Cake


 You need only four ingredients for this super easy frozen dessert. Simply layer snack cakes with ice cream and freeze.

Ingredients

    1 1 pound box individually wrapped chocolate creme-filled cakes (8 per package) such as Suzy Qs
    2 cups (1 pint) mint chocolate chip ice cream OR: your favorite flavor
    1/2 teaspoon mint extract, if using mint ice cream
    2 cups frozen nondairy whipped topping, thawed
 

Directions

1. Line 8 1/2 x 4 1/2 x 2 5/8-inch loaf pan with plastic wrap, with plastic overhanging edges. Remove wrapping from 8 cakes. Press 4 cakes into bottom of pan, so the long sides of the individual cakes are parallel with short end of loaf pan.
2. Place loaf pan in freezer while softening ice cream. Let ice cream stand at room temperature for 10 minutes, stirring until consistency of cream cheese. Once ice cream is thickly spreadable, remove pan from freezer. Spread ice cream over top of cakes and to edges of pan.
3. Press remaining 4 cakes gently on top of ice cream, arranging in same manner as first layer. Tightly cover top of cake with overhanging plastic wrap. Freeze until fairly firm, about 3 hours.
4. Fold mint extract, if using, into thawed whipped topping. Once cake feels firm to touch, uncover top of cake. Invert onto platter; remove pan and plastic wrap. Frost sides and top of cake with thawed whipped topping.
5. Refreeze for at least 2 hours or overnight. Thinly slice and serve.

Gingerbread Trifle


 The flavors of gingerbread, orange, and cardamom combine to create the perfect holiday dessert fit for a crowd.

Ingredients

    4 cups whole milk
    2/3 cup sugar
    4 tablespoons cornstarch
    1/4 teaspoon salt
    4 egg yolks, plus 1 whole egg
    2 teaspoons vanilla extract
    1/2 teaspoon ground cardamom (optional)
    1 box (14.5 ounces) gingerbread cake mix (such as Betty Crocker)
    1 pint (16 ounces) heavy cream, cold
    1 orange, juiced and zested
    2 tablespoons confectioners' sugar
    1/2 of a 13-ounce box of gingersnaps, crushed


 Directions

1. Mix milk, sugar, cornstarch and salt in a medium pot. Cook over medium-high heat until mixture comes to a low boil; simmer until it thickens, 2 to 3 minutes. Remove from heat. In a large bowl, beat the 4 yolks; slowly whisk hot milk into the yolks. Pour mixture back into pot. Whisk over medium heat for 1 minute, remove from heat, and stir in 11/2 teaspoons of the vanilla and the cardamom. Pour into separate bowl, cover with plastic wrap and refrigerate 1 hour or until cool.
2. Meanwhile, prepare and bake gingerbread cake mix as per package directions for an 8 x 8-inch cake, adding remaining whole egg and 11/4 cups lukewarm water. Cool completely in the pan on a wire rack.
3. In the bowl of an electric mixer fitted with the whisk attachment, add cream, remaining 1/2 teaspoon vanilla, 2 tablespoons orange juice and 1 tablespoon orange zest. Mix on medium until soft peaks form. Add confectioners sugar and mix on high until stiff peaks form, making sure not to overmix. Store in refrigerator until assembly.
4. To assemble: Cut cake into 1-inch cubes. Place 1/3 of the cake cubes in a trifle dish, followed by 1/3 of the pudding, gingersnaps and whipped cream. Repeat 2 more times. Garnish with gingersnaps and orange zest, if desired. Refrigerate for at least 1 hour to allow flavors to combine before serving.

Red, White and Blueberry Ice Cream Dessert


 Raspberry sorbet, vanilla ice cream, and a flavored syrup create this summer dessert.

Ingredients

    2 pints raspberry sorbet, softened
    2 pints vanilla ice cream, softened
    1 recipe Hibiscus Syrup
    Additional blueberries (optional)

Hibiscus Syrup

    4 cups water
    3 cups sugar
    2 cups dried hibiscus flowers or 8 Red Zinger herb tea bags
    1 teaspoon ground cinnamon
    4 cups blueberries
 

Directions

1. Line two 8x4x2-inch loaf pans with foil, extend foil over pan edges; set aside. Spoon 1 pint of raspberry sorbet in each prepared pan; spread evenly. Cover and freeze 1 to 2 hours or until firm. One-half hour before spreading second layer, allow vanilla ice cream to soften 30 minutes in refrigerator. Spoon 1 pint softened vanilla ice cream on raspberry sorbet in each pan. Cover; freeze 4 hours or overnight until ice cream is firm. Place serving platter in freezer.
2. To serve, remove ice cream loaves from pans, using foil to lift. Peel back foil and slice each loaf in 8 slices. Place slices on frozen serving platter. Serve with Hibiscus Syrup. Or scatter the additional blueberries over slices. Makes 16 servings.

Hibiscus Syrup

1. In a large saucepan combine water and sugar. Bring to boiling, stirring to dissolve sugar. Add hibiscus flowers or Red Zinger herb tea bags. Reduce heat. If using flowers, boil gently for 40 to 50 minutes or until syrup is reduced to 3-1/2 cups. If using tea bags, boil gently for 5 minutes. Remove tea bags with a slotted spoon. Continue boiling gently until tea mixture is reduced to 2-1/2 cups. If using flowers, cool mixture 15 minutes; strain and discard flowers. Cover syrup and cool completely (syrup will thicken as it cools). Whisk 1 cinnamon into syrup. Add blueberries. Makes 4-1/2 cups syrup.

Southern Pimento Cheese Burgers


 These hearty grilled cheeseburgers are layered with bacon, honey slaw, a pimento cheese spread, and crushed potato chips and are then toasted in the oven and served warm.

Ingredients

Pimento Cheese:

    1 cup shredded extra-sharp cheddar cheese, at room temperature
    1/3 cup shredded Monterey Jack cheese, at room temperature
    3 tablespoons mayonnaise
    2 tablespoons cream cheese, softened
    2 ounces jarred diced pimento peppers, drained
    1 tablespoon bread and butter pickle juice
    1/2 tablespoon creamy horseradish sauce
    1 teaspoon yellow mustard

Honey Slaw:

    2 tablespoons mayonnaise
    1 tablespoon honey
    1 1/4 cups shredded cabbage
    8 slices thick-cut applewood smoked bacon

Burgers:

    1 1/4 pounds ground chuck
    1/4 pound cured and smoked country ham, finely chopped (or chopped in a food processor)
    1/4 teaspoon kosher salt
    1/4 teaspoon black pepper
    4 potato hamburger buns, split
    1/2 cup crushed kettle-cooked potato chips
 

Directions

1.Heat oven to 375 degrees.

Pimento Cheese:

1. In a medium bowl, combine cheddar, Monterey Jack, mayonnaise, cream cheese, pimento peppers, pickle juice, horseradish sauce and mustard; mix until well-combined.

Honey Slaw:

1. In a small bowl, combine mayonnaise, honey and cabbage; mix until well-combined.
2. Heat a 12-inch nonstick grill pan over medium-high heat. Add bacon and cook 5 to 10 minutes or until crisp, flipping once. Drain on a paper-towel-lined plate. Pour off almost all of the bacon fat from the pan, leaving a very thin layer.

Burgers:

1. Combine the beef, country ham, salt and pepper in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 4 equal portions and form into patties to fit the buns.
2. Using the same grill pan, cook the hamburgers over medium-high heat for 8 to 12 minutes, turning once, until internal temperature registers 145 degrees on an instant- read thermometer for medium-rare.
3. Meanwhile, place buns on a rack in the oven. Bake for 3 to 5 minutes or until lightly toasted.

Assembly suggestions:

1. Spread a generous amount of Pimento Cheese on the cut sides of the buns. On each bun bottom, place a thin layer of Honey Slaw. Top the slaw with a burger, 2 slices of bacon and crushed potato chips. Add the bun tops. Place the completed hamburgers on a nonstick baking sheet and bake in the oven for 1 minute. Serve burgers on warm plates.

Skinny Cheeseburgers


 These low-fat burgers are made with extra-lean ground beef and topped with reduced-fat cheese. To keep the lean burgers moist and juicy, finely chopped mushrooms are added to the meat mixture.

Ingredients

    1 cup fresh mushrooms
    1 scallion, trimmed and cut up
    1 pound 95% lean ground beef
    2 tablespoons seasoned bread crumbs
    1 tablespoon Worcestershire sauce
    1/4 teaspoon salt
    1/8 teaspoon black pepper
    4 slices 2% American cheese
    4 English muffins, split and toasted
    8 leaves arugula, rinsed and dried
    1/2 package carrot sticks
    1/2 package celery sticks
 

Directions

1. Trim mushrooms. Place in food processor with scallion. Pulse until finely chopped. Scrape into bowl; combine with beef, bread crumbs, Worcestershire sauce, salt and pepper. Shape into four patties.
2. Heat a large nonstick skillet over medium-high heat. Add burgers and cover with a sheet of foil. Cook 6 minutes. Uncover burgers and flip over. Cover; cook 5 more minutes. Uncover pan and top burgers with cheese. Cook 1 minute until cheese is melted and burgers register 160 F on an instant-read thermometer.
3. Transfer burgers to toasted muffins and top with arugula. Serve with carrot and celery sticks.
