Together with the peppery punch of arugula, the classic combination of
blue cheese and beef will transform leftover steak into this delicious
sandwich recipe.
Ingredients
1/3 cup crumbled blue cheese
1/3 cup mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon white wine vinegar
8 slices sourdough bread, toasted
Spice-Rubbed Flank Steak slices
1/2 cup fresh arugula
1/2 cup bottled roasted red sweet pepper
Directions
1. In a small bowl combine blue cheese, mayonnaise, Worcestershire sauce, and vinegar. Spread one side of toasted bread slices with blue cheese mixture. On half the slices, divide sliced steak, arugula, and sweet pepper; top with toast slice. Secure with wooden picks. Makes 4 sandwiches.
